Dreamy "Lemon Drizzle Cake"

Hello sweet ladys and gentlemen,

When life gives you lemons...make a  Lemon Drizzle cake out of it. Lemon Drizzle cake has been my favourite cake for years now. I love all about it: It is moist and fluffy, it tastes sweet and sour at the same time and the thin layer of crisp lemon frosting..its heaven in my mouth. Delihtfully delicious.

So grab yourself some fresh lemons and go bake a Lemon Cake. It's not only a beautiful way to relax or a great way to urprise guests, it is also very quick and easy to make.







Ingerdients:

4        Eggs
2        Lemons
220g  Butter
220g  Sugar
270g  Flour
1pk   Baking powder
         Powdered Sugar

Preparation:

First of all, preheat your oven to 180°C and lightly grease a cake tin and set it aside.
Then grab a large mixing bowl and put the eggs, softened butter and sugar in it and stir with a handmixer until it is fluffy and creamy.
Then put the zest of two lemons and the juice of half a lemon over the mixture. Give it another good stir.
Then mix the flour with the baking powder and gradually mix that with your egg mixture until it has a creamy consistency.
Then pour the batter into the greased cake tin and pop that into the oven for about 40 minutes.
While the cake is in the oven, go ahead and squeeze the lemons into a small bowl and mix the juice with one tablespoon of powdered sugar.
When the cake is out of the oven, prick the cake all over with a fork and then drizzle a little bit of the lemon juice over the top. (Be careful here, you don't want it to get slimy so please don't use too much of the juice)
Then add powdered sugar to the juice and mix it with a spoon until it gets creamy. Then pour this heavenly deliciousness over your cake and let it cool for about one and a half hour.

Now you can enjoy your cake just by itself or with some fresh raspberries and a nice cup of tea. :)
