Hello sweet ladys and gentlemen,
Right at this moment I am sitting in my garden, enjoying the golden sunlight reflecting on the aplles hanging from the tree in front of me...Our first apples are already ripe. Later this weekend we'll have friends over and I decided to bake the first apple cake of this season. The apples are sweet, a bit sour and perfectly crispy. So I created a fluffy almond cake with very thinly sliced apples on top and a drizzle of apricot jam. This combination is pure perfection. The nutty flavour of the almonds accompanied by these sour aplles and the sweet and creamy apricot jam..heaven on a plate. It's a perfect cake for your august tea party in the garden. This apple flavoured goodness is very simple to make and still so extravagant. It will blow your mind. I love it! And don't be scared, it is very easy to make. So let's get started:
Ingredients:
250g unsalted butter
200g grated almonds
200g all purpose flour
4 eggs
250g sugar
2tsp baking powder
1tsp vanilla extract
2 large apples
apricot jam (or any jam you prefer)
Preparation:
Fist, put eggs, butter, sugar and vanilla extract in a large mixing bowl and mix it until it gets light and creamy. Then, one by one add flour, almonds and baking powder. When it is all incorporated, go ahead and lightly grease your baking tin and put the cake batter in it. After that, peel the aplles and cut them each in four equal pieces and then cut thin slices out of them. Put the sclices on top of the cake like a circle or as you would "create a rose".
Now you can bake your cake in the preheated oven on 180°C for about 1 hour.
When the cake is out of the oven and still hot you can finally spread the apricot jam on top and create a thin and shiny layer.
You can either serve your cake when it's still a little bit warm and add some vanilla ice cream or you wait until it is completely cool and enjoy it just by itself.
