I hope that everyone of you had a nice and relaxing weekend so far. On the weekends, it is usually time to bake a cake. Since I've had the first apple cake for this season, I was craving more apple cake. Yesterday, we took a walk in the countryside and there were these trees hanging full of red crispy apples.
I really could not resist so we took some with us and I decided to bake another apple cake. This time it is one with a fluffy yeast dough as a base, apple slices on top and crunchy oat-cinnamon crumbles sprinkled all over it. I have to admit...this one is more than perfection. You know those "death by chocolate" cakes right? Well, this is "death by apple" cake. Seriously, it is by far one of the best apple cakes that I have ever had in my life.
It's the kind of cake that even makes your grandma jealous.Until now, we've had it as a dessert, for breakfst and for tea... This cake is perfect in every situation and every time of the day. So let's get started baking this home run of a cake!
Ingredients:
1) Dough:
500g all purpose flour
200g sugar
1 large egg
250ml milk
1 1/2 pck. dry yeast
200g unsalted butter
2) Filling:
5-6 large apples
3) Crumbles:
150g unsalted butter
8 tbs rolled oats
1 tsp vanilla extract
2 tsp cinnamon
150g all purpose flour
Preparation:
First of all, preheat your oven to 180°C. In a large mixing bowl, mix your flour and sugar together. Then, put warm milk in a small bowl and sprinkle 1 tsp of sugar and the dry yeast on top and let that sit for about 3 minutes to activte the yeast. Now, whisk it with a fork until the milk has incorported the yeast and pour the mixture in the flour mixture. Let that sit for about 5 minutes. After that, you can add your egg and melted butter and mix it all well together until it is all very smooth. Take the dough out of your mixing bowl and pull it together with your hands to form a nice big loaf. If it is too sticky you can just add a bit more flour to it. Then, put it in a lightly oiled bowl and cover it with either a kitchen towl or plastic wrap and put it somewhere warm. Now let it rise for a good hour.
After your dough had enough time to rise, you can now flatten it out so that it fits in your buttered bakig tray. Then, cover it again and let it rise for 30 more minutes. When the time is up, you can now peel your apples and make slices out of them. Then, place them very evenly on top of the dough.
Now, it's time to finally make the crumbles. Therefore, mix all the ingrediends together with your hands. Make sure that the butter is not melted. It should be just lightly softened. Now just sprinkle them on top and bake this delicious goodness for about 50-60 minutes until your cake is nice and golden brown on the top.
